Fruity Low Carb Muffins

INGREDIENTS:

1 1/2 cups ground almond

1/2 cup desicated coconut

1/2 cup vanilla protein powder

1 tsp baking powder

1 tsp ground cinnamon

1 cup chopped dried apple

1 peeled grated apple

3 eggs

2 tsp vanilla essense

1/2 cup skim milk

2 tbsp honey or sweetner

1 cup of frozen berries of your choice

METHOD:

Preheat your oven to 180c

In a bowl, combine dried ingredients, and dried apple

Next add the lightly beaten eggs, and other wet ingredients and mix through well.

Lastly fold through berries

Spoon into muffin cups and bake for 25-30 mins or until cooked through. Muffins should spring back when touched.

Cool completely and ENJOY!!!!
